La Vacher restaurant to open August 7

Described as a country French restaurant with Hill Country hospitality, Le Vacher in Dripping Springs is slated to open Friday, August 7. Le Vacher means "The Herdsman" in French, and will feature a French-forward menu with Texas influence led by Executive Chef Jacob Euler. Nestled in the heart of the Texas Hill Country, Le Vacher celebrates the unifying power of food — breaking bread, forging connections, and creating memories. From a carefully curated wine program to local bread work and Texas-sourced ingredients, guests can expect to enjoy a true Texas Hill Country dining experience. Additionally, the restaurant will feature a full service bar.

“I am incredibly excited to provide highquality food and service to the community of Dripping Springs. I’ve always found myself more comfortable in a smaller town and I’m ready to know all of our guests so I can make sure they’re as excited as I am,” said Chef Jacob Euler. “Opening during the pandemic has been a huge learning experience and we are grateful for the opportunity to challenge ourselves in taking our guests’ health into consideration with everything we do.”

The vision for Le Vacher was to create a restaurant in Dripping Springs that had an upscale feel and a welcoming design, all while being approachable and comfortable. With these principles in mind, the project became about bringing French influence to a Hill Country setting by creating a classic look and feel, including an open kitchen and seating that exemplifies hospitality and comfort with 90 seats inside and 30 seats outside.

The herdsman name comes from similarities between France and Texas. With a focus on the cow, from both an agricultural and a culinary perspective, the team behind Le Vacher believes that the two locales both understand how to properly utilize the whole animal, which is reflected in the menu with not frequently used cuts and share plates that feature cuts of beef not often found in grocery stores.

The menu will feature snacks and previews, including Chicken Boudin and Texas Tomatoes with Goat Cheese, while the rich decadent meals designed to be shared will feature dishes such as Crispy Spaetzle, Classic Steak Tartare, and Foie Gras Parfait. Le Vacher will also have a brunch and lunch menu which will include Tarte Flambee, Baguette Sandwiches, and more.

In addition to a carefully curated wine program, the cocktail menu will feature heritage cocktails, which will always be on the menu, as well as seasonal cocktails, or Le Vacher favorites, which will change throughout the seasons. Heritage cocktails will include cocktails such as a Sazerac and Negroni, while the seasonal cocktails will showcase traditional cocktails tweaked with local ingredients and house-made components. For those looking for something a little extra, the menu will feature two rotating frozen cocktails inspired by French ingredients.

As circumstances surrounding the COVID-19 pandemic continue to evolve, the health and safety of our guests, team, and community are the top priority. Le Vacher will open with comprehensive health and cleanliness protocols consistent with government recommendations. On top of tables being spaced apart and the staff wearing masks and gloves, the team at Le Vacher have gone through training to ensure that the restaurant has the safest environment possible.
