Hill Country Nursing and Rehab Crawfish Boil

Cindy Kendall says the tradition will continue.

The Bluebonnet Auxiliary for Hill Country Nursing and Rehab (formerly Hill Country Care) held their 8thAnnual Crawfish Boil last Saturday. The event raised money for the auxiliary, which is used to provide Christmas presents and other support items for the residents and staff.

The boil featured healthy helpings of crawfish, corn, potatoes, and for non-crawfish lovers, hotdogs—as well as beer donated by Thirsty Planet, and soft drink alternatives. The event also featured pony rides for the kids, and the Austin Cajun Aces providing the music.

The event was originally begun by facility’s former food service director Joyce Smith. “I wanted to do some special for the residents, and we came up with this idea. My son-in-law, Otis Carter cooked crawfish as a hobby and he agreed to help out,” Smith said. “At the time, he lived in Louisiana, but he has since moved to Dripping. However he still drives to Louisiana for the crawfish and cooks it for the residents.”

Carter, who owns the local business Carters Floors and More, was present working the server line and handing out the crawfish he had obtained and cooked for the residents. “I think this is a great way to brighten up the day of the resident,” Carter said.

Hill Country Nursing and Rehab has new owners, but administrator Cindy Kendall says the tradition will continue. “The new owners have been very supportive, and we look forward to maintaining our traditions like the crawfish broil and our Halloween night trick or treat candy night,” Kendall said. “Last Halloween, we had 537 trick or treaters. The Bluebonnet Auxiliary also proved a candle light dinner of salmon and asparagus later in the year for the residents. In short, we have a lot of traditions we plan to continue with the Bluebonnet’s help and the new owners.”
